Tony Matterhorn came through Republic’s Reggae Sunday this past weekend and tore down the packed club that came out to see him. “Mr. Fully Loaded” ran through some well known club records before he got to the Dancehall, only stopping to perform a couple of his songs including his smash “Dutty Wine”. This is the audio from the other night starting when Tony dropped his Rihanna “We Found Love” dub plate and RiRi declared that “Matterhorn is here tonite”. Republic was turned into a dancehall in Kingston for a night. I’m not sure they knew what hit them. Before the gig Tony told me emphatically “I’m going to KILL IT”. He did. Dope!

Continuing with our quest to re-create all of Jeff “Beachbum” Berry’s “Re-Mixed” anthology, three more cocktails will be featured tonight at the new Tuesday night down at Clough Club.
First, we have The Aku Aku Lapu, which dates from around 1960 and originated in the Las Vegas Tiki restaurant Aku Aku.
AKU AKU LAPU
1 part lemon juice
1 part unsweetened pineapple juice
1 part grapefruit juice
1 part orange juice
1 part Trader Tiki’s Falernum
1 part gold rum
1 part dark Jamaican rum
1 part Lemon Hart 151 Demerara rum (or 1 1/2 part regular proof Lemon Hart)
16 parts crushed ice
Combine in a blender and hit it until mostly smooth. Decant into your bowl or vessel and add more ice to fill. Traditional garnish is a gardenia.
Next up is the Test Pilot, an excellent first foray into tiki drinks. Like any good cocktail, it doesn’t taste like any one of its parts, but rather a careful balance of all the different ingredients. If someone normally shies away from tiki cocktails, this may be a good introduction given the balance of the drink.
Test Pilot
1/2 ounce fresh lime juice
1/2 ounce Falernum
3 teaspoons Cointreau
dash Angostura bitters
1/8 teaspoon Pernod
3/4 ounce light Puerto Rican rum
1 1/2 ounces dark Jamaican rum
Blend with 1 cup crushed ice for 5 seconds, then pour into glass. Add more crushed ice to fill. Garnish with a maraschino cherry skewered on a cocktail pick.
The Royal Hawaiian is the signature cocktail at the hotel of the same name. Often credited (by some) for the creation of the Mai Tai, the Royal Hawaiian Hotel also has the honour of where the Lapu Lapu was created.

As a chef I’m always trying to find the freshest & tastiest ingredients.
There are 8 weeks of the year when I don’t have to look very far. Those 8 weeks are spot prawn season.
During this time you’ll see fresh spot prawns on many Vancouver restaurant menus. They are jam packed full of flavour from head to tail. Spot prawns are a great choice when it comes to choosing a sustainable option.
The fishery is well monitored with restrictions on single hauls per day, maximum trap volume & license limitations. The majority of the catch is exported to Japan while the remainder is either sold fresh or processed and sold within BC.
Spot prawns are a great BBQ option & are so simple to prepare; A hot grill, salt, pepper, olive oil & lemon is all you need. Within 10 minutes you’ll be feasting on the best prawns you’ve ever had.
Every year the chef’s table society organizes a kick-off event for the spot prawn season. The cities best chef’s take part in this annual event. $12 gets you a plate of freshly cooked spot prawns & entrance into the food, beer & wine tent. It’s a great event to check-out with friends & family.

I love sports. If you’ve ever met me, you’ve figured that out pretty fast.
Not just conventional sports either. It’s crazy. Sure there’s football and hockey and baseball, but I also like darts and cricket and polo and tiddlywinks and anything that requires some competition and skill.
I’ve also always really enjoyed soccer. A lot. But its difficult to get really crazy about it on a regular basis. The greatest teams in the world play a million miles away at odd hours. And finding a group willing to get up with me at 6am to find a match didn’t work out so well.
I am also quite boisterous whilst cheering for my teams. Borderline obnoxious. Thats why I think the universe thrust me and the Rain City Brigade together.
Martain Rivard from Dominion Barbers is not only a co-worker (Dominion Barbers is another fine Donnelly establishment) but he is also a bro. And he cuts my hair. And he happens to not only chop the hair of many Whitecaps FC players, he is a rabid fan and an original founding member of the Rain City Brigade.
I first encountered them as a whole from an invite by Martain to pregame with them at Library Square.
It took less than a minute to realize that I would fit in quite well amongst the singing, clapping and drumming mish mash of football revellers.
There’s Martain, or Frenchie – A bearded Frenchman emblazoned with tattoos. Mike, the dear leader. Donovan – the groups’ El Capo, leading cheers and generally talking more than I do, which is a difficult feat in itself. EJ – he represents the abs for the group.
They are the core of this new supporters crew and can be found at Library Square two hours before each home game and hanging out to watch away matches.
They populate section 248 of BC Place staduim and are rabidly loyal to the Whitecaps and twice as entertaining.

It has been a long time coming for our organization. You may have seen it during Tales of the Cocktail Vancouver 2012, you might even have seen a blender or two pop up at Cinema Public House for our “Cocktails & Dreams” night last year. Starting this Tuesday, April 17, The staff at Clough Club are bringing Tiki to Gastown. What started as as a light-hearted conversation between two bartenders has grown to a full-blown summer project.
In the spirit of Eric Ellestad’s project to re-create every cocktail listed in the Savoy Cocktail book, our very own Donnie “Bahama” Wheeler is about to embark on a similar voyage: To mix up every recipe in Jeff “Beachbum” Berry’s Beachbum Berry: Remixed.
Every Tuesday night from 6pm to close, Donnie will be mixing up a selection of Tiki Classics and not-so-classics for the Tiki enthusiast to imbibe. Two classic recipe books in one volume, fully stocked with over 200 cocktails to mix and play. The rules are pretty simple: 1) 2 or more cocktails a week featured 2) Stay true to the listed recipe (not brand specific) 3) Have as much fun as possible. We’ll even Tiki-fi the room to give that Trader Vic feeling each week.
This week’s cocktail features are Navy Grog (Fresh lime, white grapefruit juice, soda water, honey, Puerto Rican rum, dark Jamaican rum & Demararra rum) the Planters Punch (Fresh lime, sugar syrup, gold Jamaican rum, dark Jamaican rum, gold Virgin Islands rum, grenadine, falernum & Angostura bitters) and the Scorpion (Orange juice, lemon juice, orgeat, Puerto Rican rum & brandy). Those scorpions may even end up in bowls so be careful…
Whatever your flavor or Tiki preference. Make sure to make your way down to Donnie “Bahama’s” watering hole this Tuesday night. Bring your own Tiki mug if preferred (there are no false Idols during Tiki night). You may even catch a glimpse of “Tiki TK” which I can assure you, is not a sight to miss.
This weekend at Republic’s Reggae Sundays, Tony Matterhorn is making the journey from Kingston, Jamaica to Vancity for a special 2 hour long performance/DJ set. The winner of both Jamaica’s World Clash and the UK’s Cup Clash, Matterhorn got his start in the sound system arena as part of NYC’s King Addies. After leaving to pursue a solo career with his smash “Dutty Wine”, Matterhorn has found success both in front of and behind the turntables, Whatever you want to call him – Mr. Fully Loaded, Mentally Ill, Man From Mars, or Dutty Wine Man – there is no doubt that Matterhorn is among the worlds best selectors.
