The Clough Club’s craft cocktail list is dark-spirit forward, with a focus on house made barrel-aged recipes.

Here’s a sampling of some of our craft cocktails recipes:

Shallow Water

Campari, Cointreau, honey syrup, fresh lemon juice, fresh lime juice, egg white, Campari powder

1oz Campari
1oz Cointreau
1oz Honey Syrup
1/2oz Lemon juice
1/2oz lime juice
1oz egg white
Dust campari powder

In a cocktail mixing tin add 1oz Campari, 1oz Cointreau, 1oz honey syrup and 1oz egg white. Add 1/2oz lemon juice and 1/2oz lime juice. Fill glass with ice and shake and strain into a rocks glass filled with ice. Dust with Campari powder.

Featuring $10 pork belly
Pork belly is a boneless cut of fatty meat derived from the belly of a pig.
The pork belly is roasted with onion, garlic, celery thyme & chicken stock.
The maple & chipotle glaze in a reduced sauce which contains maple syrup, chipotle peppers, shallots, garlic & red wine vinegar. All these items are reduced down till a syrup consistency and pureed till smooth

Suquet is a traditional seafood stew from Spain. This is our interpretation, using local seafood.
Onions, garlic, tomato, saffron, olive oil, pacific cod, local clams, white shrimp, potato, grilled bread, flat leaf parsley

Featuring: $10 precervacion platter
This is a smoked fish board (smoked trout, smoked tuna & smoked salmon) with a changing array of condiments. The preserves are made in-house and reflect seasonal changes. The egg has been hard boiled and submerged into vinegar to age.
