For thousands of years animals have been slaughtered and there meat preserved for months to come. Salting, smoking, & drying are the methods used to do so.

In recent years there has been a resurgence in butchers, these people have revitalized the craft of charcuterie and become rockstars of the cooking world. Butchers have sourced old world recipes to honour tradition while putting their own twists on these classics.

With the onset of the locavore diet, we are seeing some of the healthiest animals be raised for slaughter and turned into beautiful charcuteries.

Coarse salami’s, prosciutto, & coppa are just a few that come to mind.

Our newest Donnelly Group venue – Killjoy (opening soon at 1120 Hamilton St, Yaletown) will be featuring products from some of the city’s best butchers.

Local & international cheeses will also be featured to complement both our charcuterie and wines on tap.
